Food Microbiology explores the fundamental elements affecting the presence, activity, and control of microorganisms in food. The subject also includes the key concepts required to meet the minimum standards for degrees in food science with a wealth of practical information about the most essential factors and principles that affect microorganisms in food.

Food microbiology is mainly concern with production of food, beverages, cheese, yogurt, tempeh, kimchi, beer and wine, etc. with the use of microbes. As most people are aware, microbes can also cause food spoilage. This area of food microbiology is of major economic importance. Food microbiology also deals with the detection and prevention of food-borne disease. Some of the organisms commonly involved in food-borne outbreaks include Escherichia coli, Staphylococcus aureus, Listeria and Salmonella, etc.

Industrial microbiology is often linked with food microbiology as food production using microbes is part of the food industry. Also some food additives and food supplements, such as citric acid and amino acids, respectively, are produced industrially using microbes. Microbes are also used to produce important products not related to food. Each year over 100,000 tons of antibiotics are produced world-wide by bacteria and fungi in huge tanks some with volumes in excess of 100,000 liters. Microbes also produce steroid hormones, enzymes for detergents, and emulsifiers.

Bohra A

Dr. Avinash Bohra (b. 1980) at Jodhpur. He obtained B. Sc. (2000), M. Sc. (2002) and Ph.D. (2005) degrees from Jai Narian Vyas University, Jodhpur. His Ph. D. work was on Plant Pathology and Plant Microbiology. He worked as Senior Research Fellow in CAZRI (2004-2006) in the project of Apcess fund entitled: Mortality of Prosopis cineraria identification of causal factors and development of management strategies. He joined as an Assistant Professor in Mahila Post Graduate Mahavidyalaya, affiliated with J. N. V. University, Jodhpur. He has 7 years of teaching experience. He has been associated with the organization of several programmes, workshop and seminars in the college. He has published many research papers in journal of International and National repute. He has also received best paper award in field of microbiology.

Dr. Parihar P

Dr. Pradeep Parihar obtained M. Sc. (Botany) and Ph.D. degree with specialization in Microbiology from Jai Narain Vyas University, Jodhpur. Presently working in Department of Biotechnology, Lovely Professional University, Phagwara. He worked on rhizosphere microflora and antimicrobial activities and has published more than 45 research papers and review articles in various National and International Journals. He has been awarded Dr. Salgare National APSI Award and gold medal in 2002 by Academy of Plant Sciences, India. He is the expert and member of Editorial Boards of various societies and Fellow of Academy of Plant Sciences, India. He has published 7 books on Industrial Microbiology, Food Microbiology, Dairy Micro-biology, Environmental Biotechnology, Biotechnology, Genetics and Bio-statistics. He is a member of various societies of repute.
